Curry Pakora


Curry Pakora is one of the favorite main-course dish of  Punjabi-Cuisine. It is quite different than the other 'curry' that you may have heard about. Normally the gravy in any of the non-dry dish is called a 'Curry' and is made with toamatoes , onions and other ingredients. This one is mainly made with Gram Flour and yoghurt. 


Ingredients for Pakoras:
·         Gramflour
·         Onion (chopped)
·         Potato (chopped)
·         Green chilli (chopped)
·         Coriander seeds
·         Red chilli powder
·         Salt
·         Fenugreek leaves
·         Water (to make batter)
·         Oil

Method:
Sift the gram flour in a bowl.Add chopped onions , potatoes , green chilli ,coriander seeds , fenugreek leaves , red chilli powder and salt. Gradually pour the water and mix to form a thick, smooth batter. In a frying pan heat oil. With the help of spoon put batter and deep fry them in small batches until golden brown for about 4 to 5 minutes. Drain extra oil on paper towels.


Ingredients for Gram flour Curry:
·         Gram flour
·         Yoghurt
·         Curry leaves
·         Red chilli powder
·         Salt
·         Turmeric powder
·         Onion
·         Tomato
·         Cumin seeds
·         All spice powder
·         Oil

Method:
Blend yoghurt with gram flour until bubbles form on the above surface. In a saucepan warm oil. Add sliced onions and fry till golden brown. Then add curry leaves, chopped tomatoes , red chilli powder, turmeric powder and cumin seeds and fry for a minute. Now add water and blended mixture into it. Continously stirring till the first boil. Now add salt. Cover and cook it for 10 mins on a medium flame. After that add pakoras and cook for again 10-15 mins on a low flame.  In the end sprinkle some All spice powder and turnoff the stove. Garnish with coriander leaves. Serve with boil rice or bread.
